They won the competitive category of 'Milk Chocolate Enrobed Whole Fruit' with their innovative 'Milk Chocolate Coated Salted Capers'.
This marvelous creation perfectly captures innovation and sustainability. It carries Lilliput capers from the arid lands of Tuticorin with premium cacao grown in the lush Western Ghats. Capers are olive-like, having a lemony flavor so that they complement well with rich milk chocolate; they offer a taste with umami, saltiness, acidity, and sweetness.
Paul and Mike's products have been a result of three years of collaboration with Ishka Farms. Capers are picked and processed every day to capture the unique flavor of these buds, and salt comes from Tuticorin's salt pans, which are mineral- rich.
